Ingredients
1: 1 tablespoon oil
2: 1 onion of large size
3: 1 red pepper (red Capsicum)
4: 2 cloves of Garlic
5: 1 teaspoon hot chili powder
6: 1 teaspoon paprika
7: 1 teaspoon cumin, finely grounded
8: 500 g beef (lean minced)
9: 1 beef stock cube
10: 400 g chopped tomatoes
11: 1/2 teaspoon marjoram (dried)
12: 1 teaspoon sugar
13: 1 tablespoon puree of tomato
14: 410 g red kidney beans (red beans)
For serving
1: 1 kg long grain white rice (plain boiled)
2: 2 cup soured cream
Method of cooking
Peel and Chop the onion into small pieces. Then cut 1 red pepper (red Capsicum) into two piece, remove the seeds and chop it. Then take 2 garlic cloves, peel and chop them finely. Take a pan, lit the stove, add oil and heat up over a medium heat for 1-2 minutes. After this, oil becomes hot then add the chopped onions, cook and stir it frequently for about 5 minutes. Cook frequently until the onions color slightly changes and it becomes soft. Add garlic, red pepper, 1 teaspoon hot chili powder, 1 teaspoon paprika, 1 teaspoon mild chili powder, 1 teaspoon ground cumin. firmly stir and then leave it to cook for 5 minutes.
Add the meat into the pan which contains the mixture. Break the beef into small pieces (by spoon or spatula). When you add the mince into mix it should sizzle a bit. Cook and stir it for at least 5 minutes. you must confirm that no more pink bits left and mince becomes uniform, mince-sized lumps. fry the meat at hot heat until the color changes into brown.
Now we make the sauce. for this purpose, we take a pan and add 300ml water in it. Add crumbled 1 beef stock cube in it. Then pour this mixture into the pan containing above mentioned mince mixture. Add chopped tomatoes about 400g into it. Add 1 teaspoon sugar and 1/2 teaspoon dried marjoram and good shake of salt and pepper. Squirt and spray 2 tablespoon tomato puree and stir the mixture well.
Now it’s time to boil it. Take the whole mixture into a pan, stir it gently and put a lid on the pan. Turn down the heat until the bubbles are formed, leave it for at least 20 minutes, but keep checking occasionally to make sure that the sauce does’t catch on the bottom or side of the pan or is not drying out completely. If you think that the sauce is drying out then add some water (couple of tablespoons) into it. During all this boiling, keep stirring and make sure the heat is low. After this, the sauce and mince mixture becomes thick, juicy and moist.
Take 1 can of red kidney beans, drain and rinse them in a sieve and then add into the mixture. Now again boil it for another 10 minutes without covering the pan with lid. After this 10 minutes, again cover the pan. If you think that the sauce looks too much dry, again add some water into it. Now turn off the stove, remove the lid and leave the chili for 10 minutes before serving. This step is important because it allows the mixture of chili meat to give a wonderful taste.
